Simple Nigerian-style pancakes




Hello everyone! How are you all doing? I thought to bring you this yummy pancake recipe that is so simple and quick to make. So on those weekend mornings when you want to stay in bed for longer, you'll only need to make something real quick rather than get into full blown cooking. I find that most children can't say no to pancakes, some of them even prefer to snack on it.

Made with really simple ingredients, once you get it right, you'll want to make it every morning or at any time of the day if you choose. I love pairing my pancakes with sausage, delicious stuff!

Servings

Ingredients
3 cups of flour
2 medium eggs
½ cup evaporated milk
2 tablespoons of margarine
1 cup of water
¼ teaspoon of salt
2 teaspoons of sugar (adjust to your taste)
Vegetable oil

Procedure 

Melt the margarine in a small bowl in the microwave or place on hot water.

Add eggs into the melted margarine and beat till smooth.

Add half cup of water.

Add flour and mix till smooth, make sure there are no lumps.

Add milk, salt and sugar, add the remaining half cup of water and mix well.

Use a whisk or liquid blender, mix till smooth.
Note that you can add onions and peppers (blended roughly) to the pancake. That's totally up to you, people who like pepper actually can't make pancakes with it.

Set a frying pan on the stove over medium heat .

Add a few drops of vegetable oil, Just enough to lubricate the frying pan. When hot, pour some of the batter into the frying pan. Tilt the pan so the batter coats the surface of the pan evenly. It should be thin.

Fry the underside till it's light brown, flip to fry the top side.

Pancake is ready when both sides are done and light brown.

Enjoy pancakes alongside syrup, veggies, sausages, beverage or even oats!
